Crab Creole

Serves 8 

A terrific, spicy dish for a casual dinner party. Sweet cornbread muffins and fruit are wonderful complements.

1 large onion, chopped

2 cloves garlic, minced

2 tbs butter

2 tbs flour

30 ozs or two small cans of whole tomatoes, mashed with juice

2 tsps salt

1 lb chopped frozen okra

1 lb jumbo lump or backfin crabmeat

2 cups water

1 bay leaf

1 tsp tabasco

1/2 tsp red pepper

Sauté onions, garlic and butter in large skillet or pot. Add flour, stirring constantly, to thicken. Add mashed tomatoes, salt, okra, water, and spices and mix thoroughly. Gently fold in crabmeat. Cover and simmer on low heat for 20 to 30 minutes, stirring frequently. Allow to set about 20 minutes. Serve over rice. This dish will be spicy but not hot. You may wish to add red pepper and tabasco to taste. Enjoy!
